Recipe for Moilee Espuma by Chef Prashant Chipkar
Meen moilee, the actual common name of this dish very popular in the state of Kerala.
Meen means Fish in Malayalam. Fish Moilee, a recipe from coastal Kerala is a very lightly spiced coconut milk based stewed fish. Kerala having a long coastline and a strong fishing industry has majority contributed to various fish based delicacies among the Christian and Muslim community in particular.
INGREDIENTS REQUIRED :
– Red Onions 300 gm.
– Curry Leaves 100 gm.
– Ginger 50 gm.
– Green Chili 30 gm.
– Tomatoes 200 gm
– Coconut Milk 2 liters.
– Turmeric Powder 25 gm.
– Chili Powder 10 gm.
– Xanthan 1 gm.
– Coconut Oil 50 ml.
EQUIPMENT REQUIRED :
– Siphon.
– No2 Cream Charger.
– Double Strainer.
– Cook Top.
METHOD :
– Heat up the coconut oil in a heavy bottom pan.
– Add the onions followed by the curry leaves, ginger and chili.
– Let the onions sweat on a low flame till nicely translucent.
– Now add the turmeric and chili powder and cook for not more than a minute.
– Add the coconut milk and let it simmer for 15 mins. Once it comes to a boil you can add in
the tomatoes. And let it simmer for further 10 mins.
– Next strain the moilee and add the xanthan and blend.
– Now transfer it to a siphon and charge with 2 No2 chargers.
